how do i make it able to conquer every land in the game instead of 50

Don't have to. Whenyou meet your win conditions, you get a notice to this fact and asks you if you want to keep playing and just click yes. If you want all factions to have to conquer the map set hold regions to 110 if you're playing vanilla or 200 if you're playing a big map mod. The ai will never reach those numbers.
