Alrighty. I am playing the base M2TW with the retrofit mod installed. I find that whenever a ram approaches the gate, it gets destroyed by boiling oil before it can do anything.
Is there anything I can do to counteract this?

I do not know the circumstances, but I have not lost a ram to boiling oil yet. I converted/up graded to retrofit two weeks ago. Still a newbie!
I usually go in with two rams for insurance. Flaming peasant arrows and such.
Usually the enemy opens the gates and sallies out with a unit of infantry just before the ram starts battering. I have not yet been able to use the devices in the retrofit mod.
I usually attack with about an even force. What force ratio are you using? If it is overwhelming, maybe boiling oil is a last gasp chance.
After the early game, I tend to use artillery and simply make my own opening in the wall so that the oil is no longer an issue.
