Their javelins don't have much range.
I would concentrate on the main force first and once that's done, concetrate on 1-2 units of jineties at a time.
what if there are 6 units of them and they are uber aggressive? Micromanaging HAs against these guys is... well, I can't do it.
Crossbows work well against all HA/JavCav Reg archers work but not as well... the crossbows have a flat trajectory. You can use lots of light cav such as mounted Sergeants... Even heavy cavalry if used in the right way can surround and shred the Jinetes..

Maybe use another cavalry of yours as a bait for them, they have short range so they would have to come near if they come then charge them(Do this while they are running so fast into your bait cavalry and even mounted sergeants can kick their asses, sorry I mean horses). Actually their ability, the fast running thingy helps in here they'll run so fast to your charging cavalry that there's no reaction time for them to evade hand-to-hand(I just thought of this while reading the thread).

The key is actually similar to all combat. Engage with a unit and then flank with another. The thing with the Jinettas is that they are both a missle and a charging calvary unit. If you can, engage first with a light cav (someone else mentioned mounted seargents) and then flank with another unit. It can even be infantry/militia.
Using the Jinettas is one reason to play Spain. Best entry unit in the game for open field combat in my opinion.

As with all mounted missile troops, they're countered pretty well by infantry archers/crossbowmen.
They'll rip into your melee infantry (including high quality units), but with enough ranged troops, you'll take them out.
they are vulnerable to infantry archers, also your light cavalry should be able to catch them.
Jinetes are quite decent in melee though so catch them with light cav (anvil) to buy some time for your heavy cavalry (hammer) to catch up and hit them.
Naffatun, that's a good tactic, although it demands you to have too much cavalry (for 1 unit of jinettes 2 units of your own, one light one heavy). I think you can just do the work in one of the two possible ways:
1. Even peasant archers will make many kills to jinettes, they're not all that armoured, plus when they skirmish they turn their backs too much. So gather archers and have a couple of spearment units to frighten them off and if they charge the archers, charge them with the spears.
2. The other very good option is light cavalry. Especially if you play Danes their scouts take out axes after the charge and they entertain even the most demanding watchers. You might need to cause chain routing though, so have one more unit of light cavalry than they have jinettes, toast one of them with two light cavalries, and when it routs move to the next. Light cavalry is much better and much cheaper for this kind of job, plus it runs faster than even jinettes.
