But how does this translate in the actual battles? I mean, is it just a morale bonus, or what?

Results of auto-resolves are a lot better; I've won against odds of 1:2 with auto-resolve and a good general. I think they also give a morale bonus. Chivalry also gives a morale bonus to your men, and dread has a negative effect on the enemy's morale.

for every 2 stars your units get +1 morale +1 attack and +1 defense (i dont know about missile...). max being +5 at 10 stars.

Definately a great boost of confidence. With an army with let's say 400 men led by a general with 7 stars and some experience stripes I can run into any trouble I can find. With a 2 star genral and 700 men, I wouldn't do the same.
A general with high dread and high command stars is superior to a high-command, chivalrous general, simply because the morale bonus from the stars is sufficient enough, especially when the high-dread general has high brave traits (sometimes 4+, if you risk his life enough)
depends on the situation.
offensive... sure, id take the general with dread.
defensive... well, recently i had 6 full stack mongol armies attack one of my crusader holdings. by the end of that fight, if i hadnt had a fully maxxed chivalry and command general leading the fight, there is no way my army would have been able to hold that city against 6 mongol generals with maxxed dread and command.
ill take chivalry maxxed for defensive fights over dread anytime, and other way round if im on the offense.
lol, maybe... but when you end the battle with a grand total of 23 men left alive (out of 983 when you started)... i kinda doubt those units that were reduced down to a half dozen men each wouldnt have just thrown down their spears and shields (even with the city center morale boost), rather then keep fighting like they did.
