I've been messing around with skins and I was hoping I could import the Varangian Guard from Broken Crescent along with its rather unique use of animations. Having successfully edited the modelDB file and moved the texture and mesh files to the correct places I can now use the skin in-game, I just can't replace the two-handed ax animations with the mace-and-shield combo Broken Crescent uses to support the use of a shield with the ax.
I've tried temporarily using the Broken Crescent animations in place of the Stainless Steel ones along with many different combinations in the modelDB file. I have a feeling there's something relatively simple I'm missing.

Edit: The problem was staring at me all along, quietly snickering at my stupidity. The entry in EDU still had Dismounted_Gothic_Knights as the unit model, all I had to do was input varangian_guard and voila, everything works wonderfully.
