The main Mongol weakness is lack of infantry so you have exploit that. Horse archers are good but the ideal situation is to engage the Mongol armies on bridges are in cities or castles, where they can't use their cavalry at full effect and you can have a choke hold. I would suggest using dismounted byzantine infantry, byzantine lancers or if you have them varangian guard.

Wait for them to besiege your castles. Let them come to you as they are pretty experienced and will destroy you in the field.

If you can isolate an Army and fight them 1vs1 charge all your heavy cavalry into their Infantry Archers, retreat ur heavy cav behind spearmen and then let ur missle troops shoot it out with horse archers.

Re: Help . Mongols in the east .
I usually find that the best counter to Horse Archers, is Infantry Archers/Crossbowmen (same case in Rome); just be sure to keep them protected (maybe hire some mercenary Pikemen in Europe?)
Fighting on bridges, or in cities, castles, or forts, will make things easier as well.
I'd just try to avoid fighting horse archer to horse archer with the Mongols; theirs will have a tremendous advantage over yours in experience.

Re: Help . Mongols in the east .
I throw lots of assassins at the Mongols and Timurids, to eliminate those high-ranked generals.
I try to block bridges and fords they may use with full stack armies backed by another full stack or two. You can keep them from attacking for years that way.
I try to pick at the stacks on either end of their train with armies led by nightfighters, trying to get 2-1 or 3-1 odds against them.
If they start to move on a town I can't defend, I raze everything (but churches when christian) and move out.
My methods are real expensive. You won't get much conquest or development done while those hordes are sniffing around your borders.

just let them rush into your gate. put some spearmen there and they're dead
