That is because there's a problem with the ingame screenshots, something with the anti-aliasing. What setting is your AA on? I'm not sure, but maybe turning them off would make it work. I've never actually tried using the ingame screenshotting system. If that doesn't work, try getting a third-party software. I happen to use fraps, but I'm sure there are other programs out there that allow you to take screenshots without having to register it to be able to save the screenshots as a jpeg.
As Korlon has posted it's an anti-alaising problem.
I use a mixture of fraps (www.fraps.com) - which is freeware (that allows a screen to be taken using a PF key) or using paint shop pro.
Using paint shop pro (or gimp - http://www.gimp.org/ ) means that you use the ctrl+alt+printscreen key combination, pause the game, fast tab to the product and then paste the screen shot.
If I want to see the screen shot I took I will use the second method. There are a number of times that a mouse is left on screen in an bad place or the direction markers to the unit (the arrows that appear on the left or right hand side of the screen) are visible.
