Byzantines are damn good in SS 5.1 late game

Im playing SS 5.1 currently as the French and i have expanded into Britain, Eastern Europe, all of western Europe, northern Italy and Northern Spain. At first i was able to take much of the Byzzie's land in a matter of turns, but now my expanision has gotten sluggish and it has nearly halted, but i am just now building my military back up and getting ready for some serious conquests on all fronts. I need some advice on how to combat the Byzantines, their armies surprisingly are all infantry usually no cavalry. Thanks.

then take heavy cav and make em rout, should be easy to flank an inf heavy army

ai gets all weird when fighting begins, easy to get behind em, plus they seem to always leave missle troops undefended way back, easy to smash em with cav, even light cav

Yeah i guess, but they always have varangian guards which are surprisingly good against cavalry and get a bonus when fighting them, same with alamonia (sp?). Thanks
