Getting bored of Scotland, I like infantry battles. So, which faction should I play as next?
England has OK infantry if you include archers, next you might want to try Holy Roman Empire because of their Zwei-handers, despite the bugs. Also the Byzantines get some alright heavy infantry (Varangians)

Nah, Vanilla Byzantine infantry is sub-par compared with other factions. Varangians are mostly novelty and the only unit that might be considered superb on foot.
You need to play Denmark for that purpose.
Sorry, I use stainless steel, slipped my mind as it adds better infantry for all factions.

Playing as Denmark is definitely a good choice, but you should know that the majority of the faction's infantry is only adept at hit and run attacks. So don't expect Huscarls to hold the line against Dismounted English Knights or Armoured Swordsmen.
I suggest you try out Sicily (Norman and Chivarlic Knights), or Venice as well (Venetian Heavy Infantry).

Perhaps you should jump out of comfort and try something without great infantry...? If so, try the Byzantines. I like it because you have the Venetians, Turks, Hungary and possibly the Egyptians to deal with.

Hmm I think I'll give Sciliy a try, Byzantine seems to be overplayed. Maybe do Denmark too, thanks guys
Download Stainless Steel and go with Norway, Ireland or Lithuania.
