    Default To raze or not?

    Yeah, well, I now know that I should leave Italian rebel settlements completely intact (well, a little plunder and raping but no real bloodshed ), but what about greeks and others? Is it better to slave them or completely exterminate the city.
    Won't, say, german slaves add to cultural differences or other unrest in Rome?

    It depends on whether you have personal house rules or not. If you're attempting to play even remotely historical(IMO) then you would:

    -occupy greek/hellenic cities
    -enslave barbarian
    - it's a toss up with the eastern mysteries...dealers choice

    Cool, and what would be the best troops to garrison unrestful cities? I mean is there any 'suppression ratio'?
    I've noticed velites and funditores have some, but much less effect on unrest than say hastati.

    Really!? I didn't know that!

    I tell you, you learn something about this game everyday.

    As for me, I try to play historically accurate which means I don't use army units for garrisoning

    I also don't play the same version as you so you may have some different units than me. In my version I have a 'Colonia Militia' unit(this might be added by Imp II) which is intended to be used as the 'garrison' unit.

    The only "suppression ratio" there is is the number of troops

    I always try and use local levy troops as my garrisons (either mercenaries or what ever's available from the level II/III barracks once built). In addition, front line border towns may have elements of the regional legion housed on them temporarily.

    Pre-Marius, in Italy I only build provincial barracks once a settlement has reached city status (population 6,000+) and award Roman Citizenship at the large city level (population 12,000+). Outside Italy it's large city and huge city respectively.

    Post-Marius it's city level for the provincial barracks and Roman Citizenship at the large city level for the regional capital. Any settlement that reaches huge city status qualifies for Roman Citizenship automatically.

    Thus, for most of the campaign, Italy has to produce the bulk of the heavy infantry.

    I usually only leave one or two cities intact, where the main troops stay, and raze all the culturally different cities. In that way I can keep the garrison low while still retain a few cities to supply new armies.

    However I found it's usually the best to raze huge AI cities - they're already over-populated and problemic before you capture them. Exterminating them but keep the happiness/law buildings would certainly improve public order a lot, and you can still have a population large enough to assemble new armies. (exterminated huge/large cities are far easier to manage than small cities as AI builds many temples/sewers etc)
