Let's say I'm interested in pumping out hordes of peasant archers (1st level of archery range unit). If I built the 2nd level of archery range, will I get more peasant archers available for recruitment? Will the recruitment pool regenerate faster?

I don't think that for the standard recruitment buildings (barracks, stables, archery and siege) you receive an increased recruitment pool for lower troop types. For special units acquired through guilds, religious buildings etc there are units that get a larger recruitment pool for higher building levels.
Go into your building browser and compare. I am positive that for most units the answer is, "Yes." The pool maximum for the lower tier troops increases.Originally Posted by mikeb32123

For the first level at which you unlock a unit, you usually get 4, increasing to 6 at the next level.
But will the recruitment pool regenerate any faster?
I believe it does regenerate faster.

The unit pool maximum goes up the higher the level of recruitment building. I believe the rate at which the unit pool replentishes is a function of the population/size of the settlement, so later in the game, as you have more advanced recruitment buildings, your settlements are also bigger and more populous, so lower-level units pools DO relentish more quickly.
Replenish rate is not related to population size. It's a "fixed" value (like 0.4 units per turn) that only increases once or twice when you upgrade to a higher building level (I was wrong before).
