Dismounted French Archer
I'm looking through the unit planner that comes along with the game and I can't find which builidng and/or settlement allows the recruitment of this unit.
So what building is required for this unit?
Also, can France build buildings that increase cavalry knight's experience? (like how Spain can build jousts that increase exp points)

I don't think France can recruit these units in the Grand Campaign, sort of like England's Armored Sergeants and HRE's Dismounted Gothic Knights.
And yes, France can build Tournament fields in their castles for cavalry exp.

These units alone were enough to make me start a campaign with France.

As Khan said, those units are not unfortunately available in the grand campaign. Still, you can recruit Aventuriers (xbow) from castles and Scots guard (longbow) from cities. Though, you have those archers mounted, available from the 1st tier military academy that can be build into cities.
France is still one of the best, as it has quite the best all-round unit roster

You got the scots and aventuriers,they are maybe the best missile non-gunpowder unit
