Well, I imagine grapeshot was never implemented in SS bombards for two reasons:
1) Grapeshot itself did not, to my knowledge, exist in the Medieval period, hence the existence of things like ribaults.
2) Bombards are explicitly anti-structure cannons. Putting grapeshot in them would be like putting grapeshot in a howitzer. If anything in SS should have a grapeshot option (assuming its existence, of course), it would be the serpentine.

Edit: That said, I have no idea how one would implement it anyway. Most/all siege weapons toggle between regular and flaming shot, and a unit can only have one "special ability".
Err... 'only one special ability' - what about trebuchets?

Grapeshot is a bunch of small metal balls (think grapes) stuffed into a canister that the cannon then fires, which explodes and sends the balls out, much like a shotgun. They are devastating short-range anti-infantry tools. First I remember hearing of them is the Revolutionary War, but being American, I'm sure they were used in Europe before then.
the grapeshot is a 3rd special for the regular bombard u can use in the crusades caimpaign it had ony a few shots but was devastating against enemy troops, it had a seperate ammunition from the regular and flaming shot
i've used it a few times to great effect in my byzantine caimbaign when kingdoms first came out
