After I install SS 5.1 of course.

I'd suggest Denmark. Don't ask me why, but I always play with Denmark... Also they have nice new skins. Some think the skins look awful, so that would be a reason to play with them as well...

The Holy Roman Empire, early era. Though if you want to get a lot of heavy infantry right off the bat I'd recommend the late campaign.

I find the early era campaign boring, battling rebels stinks.
And it's nice having some already developed settlements.
