Give the Pope some money and he won't bother you. If possible, ally with him. Keep the relations with the Pope at Good or better, and you can attack anyone without much interference from His holiness.

Before I attack a fellow Christian, I donate 1000FL or so, and give 100 FL tribute for 10 turns. If the Pope still requests ceasefire, obey him and donate more money. When the mission expires, continue with your aggression

Have siege equipment (Ballistae, Catapult, etc.) and besiege and capture the enemy settlements in one turn. Then if the pope calls on you to stop you already have the settlement. It's slow, but the only way to do it if your Papal Favor is low.

I do what Stuntdawg advised. You can do it to two or more factions at the same time if you can handle a multi front war. Be careful and make sure you can move into position to assault in one turn. Sometimes the AI is smart enough to put a force in your way which you don't want to have to attack unless you can be sure to assault the settlement that same turn. In such situations I will not use the catapults in the field engagement so they don't use up any movement. You can hang out in the enemy's land and cut off trade by sitting on a road or sit on his port (which really hurts his income). Be sure not to hide in the woods because, if the enemy comes upon you, you ambush him and become the aggressor to the Pope's displeasure.

Why would you want to. First thing is first, secure the British Isles. Once you take care of those pesky Scottish you can move onto France. The biggest reasons for doing Scottland is so the British Isles can make some money and get its production rolling. If you attack both at once you might find yourself running out of money.

You know, Lost Crusader has very good advice! If you have excess money, then do this, ally with the Papal States, and donate money to them, whether one time, or with tribute, is up to you. Just try to keep on the Pope's good side, and you won't have to suffer any crusades against your heretical kingdom, if you become one....

Normally though, I focus on one enemy first, then move on to the next. You can focus on two at the same time if you want to though.

Buena fortuna! (Good luck in Italian)

Additional to the advice above, work on cardinals, get one of yours elected pope early on and declare war the turn after. Your relations with the pope will be as high as they can be just before your DoW
Hit them as hard as you can, as fast as you can, where its going to hurt them the most..... and preferably when theyre not looking!
