Some questions...
Here some more questions, hopefully people are as helpfull as the last time !
1. How do I know what unit can have what armor upgrade ? Some units have a "next armor upgrade :" but some don't have a line like that, does that mean they can never upgrade ?
2. When are there invasions from the east ? I got several "horde is coming" messages, but I don't see anything coming in this game and I got the entire middle east. Is that because I build watchtowers everywhere and they only spawn in FOW or something ? Are they scared of my multiple top-unit stacks ? 
3. Do priests inside cities have effect on the religious percentage ?
4. Do assasins (or spies) in my own cities have an effect on population unrest ?
5. What governer stat has effect on unrest ? Is it command ? I thought it was, but when I move generals in and out, it seems to me that it's fairly random and not connected to any of the stats at all.
6. Is there a way to make a certain general the governor or do I have to move the other generals out first ?

1. The ones that don't have that, either can never upgrade, or you have upgraded them to the max already. Check which level smithy/armourer produces the armour the unit needs, build that one, and send the unit to that smithy to upgrade.
2. Sometimes the Mongols/Timurids spawn on the eastern edge of Russia, not the middle east. If you really want to see where they are, press the "~" key to open the console, type "toggle_fow" + enter and you can find them. Toggle_Fow again to bring back fow. Their spawning has nothing to do with fow.
3. Definitely. Whether they are in the city or in the province they still contribute to conversion. Also build bigger and better churches to speed up conversion.
4. Yes they help lower it, and also root out enemy spies which may be causing unrest anyway.
5. Not sure, it may be Piety.
6. You have to move him out first. The game always makes one general the governor if you have more than one in the city, based on his stats. Not sure what exactly it goes on though.

an addition:
5. The only thing that affects unrest are traits that give a negative bonus to unrest (like kind ruler).
6. The manual says that the general with the highest piety will become governor.
