From my English campaign last year, I was charging east through Europe and decided to take on a Milanese stack defending the bridge outside Venice, along with the Venice garrison. I expected to be ripped apart, but wasn't concerned. As long as my general survived.
My first battle with the Mongols. I'd tried to tempt them into attacking a settlement, but they weren't interested so I decided to go after them.
From my recent Milanese campaign, a full stack of HRE militia decided to have a go at my settlements in northern Italy, so I went out to greet them with a siege stack heading for HRE-held Zagreb.
The general I engaged, along with his entire bodyguard unit, were cut down by crossbows without getting anywhere near my line. The general leading the reinforcements took a flaming catapult shot to the face. He is the one in the middle of those three crispy cavalry units about centre-left of the first screenshot.
After some efficient expansion in Africa, I decided to push out from northern Italy in all directions. France got caught off guard, as did the two HRE stacks and garrison at Vienna. The majority of the combined force was crossbow units, that were outranged by my Genoese Crossbow Militia. As their units exchanged fire with mine, after they'd trudged through a forest, my cavalry was attacking their rear and rounding up routers. One of the HRE captains was destroyed by an HRE Trebuchet shot. The other captain was cut down by my crossbows and the neral was run into the ground as he tried to flee.

Now for one of my finest achievements in M2TW. I'd sent a powerful field army deep into Hungarian territory. The Hungarian forces seemed to see the threat, and massed their forces at their capital, Sofia. My intention was to attack the defending stacks one at a time then deal with the garrison, taking full advantage of night fights. Unfortunately, I had so many active generals in the area that I'd got my stacks mixed up. Turned out the general wasn't a night fighter, which I discovered when I attacked a Hungarian stack. I couldn't be bothered reloading, so I fought.
At one point, I had all but my general and a battered cavalry unit routing. I managed to consolidate my scattered force into a single group, which combined with my cavalry charges was enough to rout the remnants of the Hungarian force
