Portugal, Castile or England. All three countries start in more than three provinces, no serious conflict with others (save England, but you can manipulate France and Brittany) and a great colonizing position.

Japan(advanced since slower tech)
Novgorod did not work for me

I am thinking about starting a Scotland campaign now. Should be easier than England since it involves no war in beginning and only England needs to deal with, which can be easily done if you purposely screw up England's ambition in Ireland (dipolmacy can do that alone). Scotland is also easier to build a colonial empire I believe.
Edit: I change my word. The problem of Scotland is not its position or anything, but its resource!!! God, I have so few money to spend that I am starting to think about using trick to get some money from others...
Scotland has too many diplomates anyway.
