in my experience you can do pretty well if you focus on a good variety of cavalry and plenty of ranged units. You should try posting in the battle planning forum, I posted the same question once and got some excellent advice.

Also avoid fighting them in the open, their mobility and overwhelming numbers are really tough to beat. Try weakening their armies by spamming weak militia armies and attacking with those armies. Then wait until they lay siege on your cities and try to defeat them there. Dismounted Sipahi Lancers are really good against Mongol Armies since they consist of loads and loads of cavalry and a weak Infantry force.
