First open the Americas EDU and look for the Apaches model you want to add to the GC. Notice the armour_ug_models entry? For Dog Soldiers it’s Indian_Light_Archer
Copy the whole entry for Dog Soldiers and paste it in the GC EDU.

    Now go to
\Medieval II Total War\mods\americas\data\unit_models and open the battle_models.modeldb. Look for indian_light_archer

    It will look like this:

    Code:
    indian_light_archer
    1
    1
    55 unit_models/_Units/Indian/indian_light_archer_lod0.mesh 6400
    4
    8 apachean
    64 unit_models/_Units/Indian/textures/indian_light_apachean.texture
    62 unit_models/_Units/Indian/textures/indian_light_normal.texture
    52 unit_sprites/apachean_Indian_Light_Archer_sprite.spr
    4 merc
    64 unit_models/_Units/Indian/textures/indian_light_apachean.texture
    62 unit_models/_Units/Indian/textures/indian_light_normal.texture
    45 unit_sprites/apachean_Indian_Light_sprite.spr
    10 chichimeca
    66 unit_models/_Units/Indian/textures/indian_light_chichimeca.texture
    62 unit_models/_Units/Indian/textures/indian_light_normal.texture
    54 unit_sprites/chichimeca_Indian_Light_Archer_sprite.spr
    5 slave
    64 unit_models/_Units/Indian/textures/indian_light_apachean.texture
    62 unit_models/_Units/Indian/textures/indian_light_normal.texture
    45 unit_sprites/apachean_Indian_Light_sprite.spr
    4
    8 apachean
    61 unit_models/AttachmentSets/Final Native_apachean_diff.texture
    61 unit_models/AttachmentSets/Final Native_apachean_norm.texture
    0
    4 merc
    57 unit_models/AttachmentSets/Final Native_merc_diff.texture
    57 unit_models/AttachmentSets/Final Native_merc_norm.texture
    0
    10 chichimeca
    63 unit_models/AttachmentSets/Final Native_chichimeca_diff.texture
    63 unit_models/AttachmentSets/Final Native_chichimeca_norm.texture
    0
    5 slave
    58 unit_models/AttachmentSets/Final Native_slave_diff.texture
    58 unit_models/AttachmentSets/Final Native_slave_norm.texture
    0
    1
    4 None
    11 MTW2_Bowman
    13 MTW2_Knifeman
    1
    19 MTW2_Bowman_Primary
    1
    18 MTW2_Knife_Primary
    16 -0.090000004 0 0 -0.34999999 0.80000001 0.60000002
Now copy and paste it in the GC battle_models.modeldb.

Notice the lines that ends with .mesh, .spr and .texture? That all the mesh, sprites and texture you need. You can copy and paste them one by one, remember to keep the folder structure as well, or if you planning on adding a lot of units, you can copy and paste the whole _units , unit_sprites and attachmentsets folders from Americans to the GC.

AFAIK kingdoms don’t add any new animations. So all the animations are in GC already.
You need to have 50 post before you can rep people but that's ok.

Sorry guys didn’t know you were that new to modding. EDU is sort for export_descr_unit.txt. You find it in
    Medieval II Total War\data folder
    for GC and
    Medieval II Total War\mods\americas\data folder
    for Americans.

You need to add the units to the export_descr_buildings.txt, EDB for sort. For the GC you find it in
    Medieval II Total War\data folder.

You can do it in two ways. You can make the apaches just like the aztecs in the GC. The Aztecs don’t have a building tree in the GC. They can’t build any new buildings and can recruit all the units from the Stone Wall only.

You may wonder why CA did it that way. Simple aztecs are a non playable faction the New World is discovered at the end of the game and when the player goes there he expect to find undeveloped cities with lost of gold, defended by low-level warriors. If the aztecs had a building tree they would have developed the cities and army, making them too strong.

So if you want to make the apaches just like the Aztecs open the export_descr_buildings.txt find the entry for stone_wall and add all the units there.

If you want them to have a building tree open the export_descr_buildings.txt for Americas compare it too the export_descr_buildings.txt for the GC. Copy and paste the apache units from Americas export_descr_buildings.txt to GC export_descr_buildings.txt, making sure they end up under the same building type.

Adding a new faction to the GC is not an easy task. There is a lot more to do, a lot more files to edit before it will work, even as a non playable faction. Check this guide on adding a new faction:
