So I find that militia units and peasant archers/crossbows take care of the enemy just fine most of the time.

But just for fun, I like to recruit my best units and overpower the enemy and give them absolutely no chance. Sometimes I'll send 7-8 elite units against 4-5 weak rebel units and just tear them apart. Sometimes I can break them and rout them before any of my men die. If even 1 man escapes, I consider it to be failure.

I kill the brigands with all the "some of the best units you can recruit" rewards. I often end up with a general, 8 knights and 2 culverins taking out some peasants and miltia or something like that.

I remember once when late game, i used about 4 bombards as Spain, went to a rebel army that had 2 peasants in it. I never even touched a sword, the cannons actually were able to get so close to them, without them charging, and just unleashed volley after volley. I remember the first cannon ball running right down the center line, killing about 20 some peole, then the general last
