Riding a raid
Take one of your generals who you don’t like and or don’t need send him and just him on a fast ride through a warring factions territory avoiding battle and retreating as soon as any battle starts that you are forced into. Sometimes to mess up their production you can lay a siege for a turn or two with him. Your enemy will chase him all over the place weakening their border if he is deep enough and he will also draw out any assassins or spies they may have. If you see the enemy giving chase chances are they are forces from their front lines and it creates a good opportunity to attack. But all together it is just fun. And it is classic to use this trick against Mongols and might even save a city for you if they chase after him you can even lead the Mongols into a rival factions territory.
An even better way to use this trick against the ai is getting your ally to go to war against an enemy, say your playing England and France declares war against you ally yourself with the HRE or Milan. Use this tactic, when the French units give chase lead them into HRE or Milan territory when your ally sees two or more French units pop up in their territory they will attack them and in a few turns your French battle front is weakened and ripe for your picking. This tactic works great for multiplayer as people will find it hard not to go after a lone enemy general even more so then the ai. Not to mention that if you move in a large force after doing this for a while you can destroy multiple enemy units in detail. Doing this in multi player you can easily get other players to fight each other by leading pursuers into someone else’s territory your general will pose no real threat, but them seeing the three small armies who are chasing you pop up in their territory will start a war.
I will note it is important however to only use a general for this using a regular cav force or attaching a cav force with your general will lead to problems with certain mods that place an emphasis on supply and distance.
