Not Enough Time

So I was playing England in the campaign on Hard and I have conquered all of North Africa and Western Europe but I face to the problem of a strong Danish faction and Venetians who have bases somewhere in far eastern Europe that I cannot get to that keep harrasing my Italian provinces. The Russians have also made forays into Scandinavia blockading my ports and such. Also the Middle east is rife with Mongol vs Timur vs Turk vs England cluster**** which has gone nowhere for about 50 turns. I control all of the new world after from the last 2 remaining Aztec towns which are going to fall in 5 turns when my slow ass ships land with boat loads of Hospitellers and Guns. the problem is I only have 31 turns remaining yes I did waste alot of them once I discovered the new world and contending with insurrections which plagued my former Islamic regions. But I do wish to continue past the last turn how to I script this to make my game non ending? Also how can I defeat the unbeatable Mongols and Timurs without getting raped?

Don't face the Mongols and Tims in open fields, always on hills or defending bridges, or best stay in the cities.

I don't know how to script so that it doesn't end on the last turn though, sorry.

mongols arent unbeatable. as dick said, dont face them in the open, its suicide. best ways to fight them is to let them lay siege then break it (youll need some good cavalry and some practice) or fight them on their cities. and for that, unless you want to take some serious beating and lack troops to defend after you conquer, find a way to make them waste their arrows before you assault. using a unit taking cover behind a wall should do it. if you can afford to have some archer reinforcements ready for when yours are empty, the better.
