What stats (attack, defence...) would this unit have if it was in the EB?

Probably something similar to the Hellenistic Cataphract. Though the EB stat system is based one what the unit actually has, not compared to other units. Thus an expert at the stating system would have to see the model/skin used and perhaps a description before you would get a 100% accurate EB answer (though the stat expert don't usually answer question on the public fora).

Personally I figure the Kataphraktoi Hellenikoi would be around the closest match - although AFAIK the Late Roman equites clibanarii used maces and spathas as their sidearms rather than kopises (which the Romans don't seem to have been very fond of in general anyway).

Well the Kataphraktoi Hellenikoi were the base for Romaioi Kataphraktoi maybe a litle more disciplined were the Romaioi Kataphraktoi

Base and base. I often wonder where that sentence came from frankly, as the Romans started wielding comparable superheavy cavalry, equites clibanarii, only centuries after the Seleukids were a dim memory - and those were directly copied from Parthian, Armenian and Sassanid originals. (As, ironically, were the Seleukid catas.) The previous batch was the equites catafracti copied from the in comparision light Sarmatian lancers encountered during Trajan's Dacian wars...
