Nah, a senior or regular ghulam with a couple naptha grenades would not be over powered, just a powerful and fun unit. (Not to mention historically accurate!) The naffatun are no pushovers either and already in the game. You can make the unit size a bit smaller or make them very costly, etc, there are half a dozen ways to balance a unit.

Love the idea of mamluks with holy hand granade!
I read recently 'The Knights of Islam: The Wars of the Mamluks' by James Waterson and he also mentions naphta bombs thrown from the horse back. There is also a graphic in the book (from the period), showing a mamluk horseman with burning shield. Apparenlty they would set their shields on fire using naphta either to scare their enemies or just for the cool look
