before going through the civil war make client states instead of taking over provinces
after going through the civil war and turning into an empire then the over the provinces

Egypt was the biggest source of food, North Africa and the east was the biggest source of money
whereas the west was poorer and full of barbarian rebellions

In terms of expansion theres a good video on youtube that shows how the empire expanded using the total war map

    it roughly goes...
    all of Italy
    islands around Italy
Illyria and the coast of Spain
    macedon and more of spain
    North Africa
    greece/Egypt
    asia minor
    rest of spain
    syria
    gaul
    further east
    germany
    Britain

(thats a rough guess off the top of my head theres probs a few mistakes in there)

Sicily, Greece, Africa, and eventually Egypt were the main sources of Roman grain though Greece wasn't growing the grain but importing it from Black Sea colonies. In the game keeping Sicily aside from Syracuse as an agrarian region is a bit more historical though the importance of sea ports means that for game efficiency Sicily is better income province while Africa is definitely better for income though some other regions in Carthage's starting regions are pretty good for grain. Egypt is the best grain producing province in Rome 2 no question but if following history Egypt is captured far into a campaign and if you want to level up Italian cities prior you will have to find alternate sources of grain.

https://www.youtube.com/watch?v=w5zYpWcz1-E 10 minutes long and very detailed.

https://www.youtube.com/watch?v=RUcbSk0vvHY This one even uses the Rome 2 map but i think its kinda wrong so i like the first vid the most.
