I like the 3rd one, even if the difference between each of them is not that clear. It took me a short while to figure it out but I might getting old and my eyes aren't that good anymore

Anyway, very good job
I can see how you've improved your skills during the last few months Mate.

My only comment is about the roll on the bottom. We can still see a slightly texture difference between the left side (with text) and the right side. It might be possible to smouth/remove it. But that's just my 2 cents

3rd one without the blood splashes from my opinion.
Another 2 cents: you should put more contrast between the text and the pic itself. For instance, I would have made the text on the roll in "light" brown and may be add a narrow border darker arround it or some shadows depending on the result. Once again, that's just a suggestion
