Most of the available illustrations of Ottomans are from the 2nd half of the 16th century or latter. Here is an early 16th century book miniature that also includes a rare look at late Mamluks:

Ottomans besieging revolting Mamluks in Damascus Selīm-nāma, MS. Hazine 1597-8 c.1521-24
On the left are Ottoman sipahis on armoured horses and Janissaries.
On the right are Mamluk cavalry on armoured horses and infantry, both in takhfīfāt and kallawtāt turbans. The artillerymen etc. wear furry red zamṭ hats.

Does anyone have a coloured image of this?
Other images from Selīm-nāma, by Şūkrī-i Bitlisī, MS. Hazine 1597-8 c.1521-24:
Bayezid II fighting his son Selim at Uğraşdere
    Funeral of Bayezid II
Selim I fighting his brother Ahmed
Persians and Ottomans at the Battle of Chaldiran, 1514
    Selim I on his deathbed

    ...
I have found a small coloured image and a detail of Ottomans besieging revolting Mamluks in Damascus Selīm-nāma, MS. Hazine 15978 c.1521-24

It confirms the Mamluks’ Zamṭ hats are red and, again, the Janissaries are wearing a variety of colours.
