Sneak peek on the Rhomaioi Levy (also Siculo-Greek):
Just a WiP and no they are not going to be red-haired but this is one of the head models they'll be sporting.
I know that peasants are unglamorous but they are the basis for every unit type of the first tier of troops, levy archers, javelineers and levy spearmen.
Since the player who will chose to start a campaign with ERE will be seeing a lot of them fellas, let them be looking sharp.

It doesn't have to be white though, there were some colour dyes back in day not mentioning sheep wool natural colour variations from whitey to brown and then to black.

This is for now, they still need quite some work, e.g. more lower legs, sashes, belts, headpieces, certain textures for me to make seemless, at least a few more heads, their pitchforks and last -but absolutely not least- their normal maps.
By the way, for their first (and probably only) upgrade would you rather have them with leather lamellar/scale or padded, or maybe a mix of both?

Mix of both sounds good, but if your giving them an armor upgrade shouldn't you consider given a respectable weapon? I recall reading that peasants in the medieval period had knives, bows and spears when it came to weapons use since those were cheap compared to a fine sword and armor.

This model will make up the basis for all the models of the "first tier" of ERE, including at least peasant levies, peasant spearmen ("contarati" in SS), peasant archers (levy archers in SS-IIRC) and javelineers (acontistae).
So they are going to have such weapons as you suggested.
Though when it comes to acontistae I am ambivalent on whether the regular army relied on peasants for a role that sometimes was crucial.
If I were to have it my way all the peasant troops would be the hastily-conscripted-auxilia for the foot acritae and the foot acritae would be heavy infantry, in all likelyhood dismounted pronoiars, while the castrophylakae (castle keepers/guards) would be a missile unit with decent melee capabilities.
It is, however, unlikely for us to deviate from the original SS roster.
Now, for the peasant-peasant levy I do plan to throw in a real spear in addition to their pitchforks, so I got you covered there buddy.
