The Lingua Franca is of course Medieval French.
Italian and Latin are just as good however.
The use of 'Latins' in the RPG as an 'ethnicity' is only due to the fact that the Roman Empire referred to all 'Franks' (Western Europeans who carry Charlemagne's pan-Frankish culture) as 'Latins'.
Edit: Most sources however describe the 'Latin' term being applied to Catholics, but I find the need to define it more specifically to 'Franks'.

It's correctly "Pax Um Biscum (Peace Be With You)" but became Pax vobiscum and even Pax per biscum in the vulgate. There is also the pretty cool Pax per bellum, which was used similar to Deus volt as an excuse for sword drawing. But biscuits work too, actually French for "twice cooked" though
