I had never really read much into things past the fall of the west empire, so I wasn't aware that the east succeeded in taking back some areas for a brief period via belisarius until he was apparently starved of help by a jealous justinian (forgive me if i'm wrong here lol) so my question is, is there a mod (or sub mod) regarding this time, or have you thought about it?

The Odoacer Campaign would be fitting for you! There will be the important characters like: Theoderich, Justinianus, Theodora, Belisarius and Narses, with all their epic struggles!

The Odovacer mod begins in 476 AD with Odovacer the first germanic king of italia. The Justinian campaigns of Belisarius and Narses happend much later, so the two generals will not be in the mod.

The only way for them to be included is via the campaign script, if certain conditions are meet, but I doubt it.
