Latin was not officially replaced with Greek in Heraclius' reign. Heraclius used more Greek titles than previous Emperors, that's true, but there wasn't a sudden break. The Empire had been legislating in Greek alongside Latin as far back as Justinian's day, and for most of the Heraclian dynasty Latin would also still be used: see, for example, the mosaic of Heraclius' great-grandson Constantine IV that calls him Imperator. This being so, I don't think it's especially unreasonable for a campaign beginning in 610 to include plenty of Latin.

No I suppose your right, I just expected to see more use of Greek. But as you say Latin was the official language of the army, but Greek was language of church and law, even during Justinian's reign 535 Justinian made Greek language of state (G. Dagron 'Aux origines de la civilisation byzantine:langue de culture et langue d'etat' Revue Historique, 1969) But as Brian Croke points out Constantinople contained large groups of Latin speakers the senatorial class and refugees and migrants from the west and Africa

Not at all: plenty of books state Heraclius changing the language as an outright fact. The actual picture is more nuanced: the Empire was on a gradual path from a bilingual, but primarily Latin-speaking government to a solely Greek-speaking government throughout the 450-700 period.

Of course, the term "Greek" should perhaps not be used for the language, which was called "Romaic" by its speakers.

The description Last of the Romans (Ultimus Romanorum) has historically been given to any man thought to embody the values of Ancient Roman civilization —values which, by implication, became extinct on his death. It has been used to describe a number of individuals.
Flavius Belisarius (505?–565), one of the greatest generals of the Byzantine Empire and one of the most acclaimed generals in history. He was also the only Byzantine general to be granted a Roman Triumph.

Your sketches are great. Why don’t you open another tread just with your concept art? I bet that many people would enjoy the opportunity to admire your talent!

Well I appreciate the support but I don't think people would like to see my second hand doodles.

What's the clothing worn over the chainmail in the 2nd picture called? Is it a regular tunic or is it known by a specific name? I've seen it on a lot of Sassanid units in other mods and always wondered what it was called.

Naddum calls it a "Kontush" cloak, worn with the sleeves dangling.
