Wasn't there atleast one major country in Persia at the time of the crusades?
I just find it eerie how everything behind the Sultanate of Rum is rebel territory.
It just seems so boring. Was there a major country "back there"?

there were but with lot of history it was all about the crusaders and the muslims if you have a look at this link it's the broken crescent mod it got a lot of faction in it around the crusades times

Well, thats the time of the Great Seljuq Empire, is it not? Although, it was pretty much divided between all the emirs, and the caliph (I believe the leader was a caliph?) did not have much authority in the state. That's how the Sultanate of Rum came into existance anyhow.
