It is difficult to understand your problem but try going into your .pack file and then to File->Change Mod Type->Mod. Shogun 2 is funny about music and it will only accept multiple changes if the pack is a "mod" type. Also be sure that the files you are editing have the same names and are in the same folder names as in vanilla packs.
