What can you tell me about about The Knights of St. John during the 18th century?

I know that they had pretty much become "crusader" pirates at this point, but while they weren't used as far as I know, I know that Malta had a standing army at them time as well. So basically, I'm looking for what their armed forces organizational structure was like. The way I figured it, members of the order served as officers while the native Maltese served as the private soldiers, but I want to know for sure.

Obviously I don't expect anyone here to type me out paragraph after paragraph about this (though if you are relatively knowledgeable about this and want to do so, then by all means ) but I was hoping someone might know where to look. I've been googling off an on for a while and all I'm finding are pictures of their 18th century uniforms.

In the game, and to a degree of historical accuracy I believe they were a faction to eliminate any Muslim piracy in the Mediterranean.
