Does anyone have, based on the respective factions, the age at which characters will tend to die of old age? I am assuming that the elvish characters are immortal, but if anyone happens to have it, I would really appreciate it, thanks.

The maximum age a character can have is around 150 and you can not have different maximum ages for different factions. Thus no character is immortal and no character can pass 150.
This is why most elven characters are very young.

So 150's max, but is there an age when characters START dying of old age? Like 60 in original Med2
I think they start dying early in their 80 and how older the more chance they die

Just finished my 1st "Short" campaign as Eriador on H/VH. Unfortunately Gandalf and Aragorn died of old age about 20 turns before the end. Would have been nice if they'd have seen the end!
I was wondering if there's an EASY way to change the hero's starting ages for he modding challenged? Aragorn, for example, begins the game at age 38. If I changed that to age 20, he'd have made it through. It might even be "lore" appropriate considering the starting date. He'd be about 80 when things started really heating up as he was in "real life". He died at about age 120 in my campaign. Gandalf too.

You could actually set the max age to 500 but then have traits that decrease the age. This would make elves and wizards practically immortal while orcs and men would die much younger due to the traits they have.

500?150 is always refered to as max limit, have you tested this yourself or have a source?

They start dying (a random chance of dying kicks in) around 120. Most of my characters die about 5-10 turns after that, but if chance is on your side they may live longer.
