Very nice! Were there really no other excommunicated factions to crusade against? The Levant is a death trap usually in my campaigns, which is why I always take Jerusalem at the very end to meet the victory conditions as a Catholic faction...
France is by far the easiest faction in my opinion. Once you control that much territory you can monopolise the College of Cardinals, and basically attack whomever you choose without repercussion. By turn 70 in my old French Campaign I held Spain (and swarming into North Africa across the Gibraltar Straits), France, the British Isles, Western Italy (naval invasion), and could effectively take any settlement bordering the Western Mediterranean. The only problem is the Holy Roman Empire, but there's no real incentive to take Central Europe when you can simply defend the Rhine with a couple of well positioned forts.
