It's the same for every faction in that after around 30 provinces, world conquest is a matter of time and patience.
In terms of speed, Spain and Portugal can get world conquest faster than other factions by about 10 turns or so, because they are located at the left-side edge of the map, and they can build ocean-crossing ships (the Caravel) without needing the last dock upgrade.
Depends on what whether you like it more challenging or less challenging. IMO, the main highlights of the grand campaign are: (1) Mongol Invasion, (2) Timurid Invasion, and (3) New World. Having a faction closer to the east, where you get to fight the Mongols and Timurids makes it more interesting if that is your style.
There was one campaign where I sailed 3 naval stacks carrying 4 family members from Egypt to the new world. It took so many turns that 3 of the family members died of old age before reaching the new world.
And don't let a small problem become a bigger one. See my case: conquered all Europe, Africa and Russian Asia with HRE. The remaining Middle Eastern land is mostly owned by the Mongols, who have countless stacks standing in the middle of the desert (cuz they don't pay upkeep), what seems to me impossible to overrun withouting up my economy and letting some stubborn settlements rebel.
I've done it with Spain and Russia. Once you conquer Iberia, Spain is just a powerhouse to begin with since you can pick your wars, and Jinetes give them flexibility most the other Catholic nations lack early in the game. Not to mention they're the closest to the New World when it pops up. Russia can conquer the world in a hurry due to Boyar Sons. Make armies of about 15 of them and you can trample the world. Don't siege, make them sally and slaughter them, then build only enough militia to keep the city happy. Mongol/Timurids will demand attention eventually, but by then you can have all of central Europe under your control and can afford to raise and sacrifice armies in the east to slow them down.
That's interesting because in the vanilla grand campaign, I also conquered the entire map with (and only with) Spain and Russia. I got to 90 provinces with Turks, but then got bored with that campaign.
Funny, I almost did it with Egypt before getting bored.
