In my experience Arab spearmen etc. are quite good against cavalry. Romans have great javelin troops and cataphracts (!).

I am playing the Grenadines, Murtaziqa infantry butcher anything Castille and portugal have bar Miles, I do not bother with the speamen, my Archers and crossbows are the same as theirs, and my cavalry is better or the same, usually better because I have very good morale.
And I used the cheat to get to Iberia.
And the javelin troops the iberian factions bring are extremely annoying, I lost count how many coursers and Arabians went lame to those.
If the North African or Saracens do, yep, something definately is, though if the very top tiers of Grenadines slaughter them, its not. Most obvious reason is that the Andalusians had just as much armor as their counterparts.

Also, from where did the market in Granada have access to Saracen noble armor and a Seljuk helmet
Also, I can spam alot of Murtaziqa infantry, while the only thing that tops them for the Castillians and Portugese is the Miles, and each lord does not have more than 6 or 7.
