You have several options:
1. Commit a seppuku
2. Run for the hills
3. Try to use a woody terrain and run those bastards down with your ashigaru

When I started my Uesugi campaign, I took Fukushima, the province directly east of Echigo. Down on the map the way its normally oriented.
The Satomi clan sent a large stack of Samurai archers, yari samurai and ashigaru to take it back.
I found that I couldn't hold the province against that many. So I fell back. I lost the province.
But the funny thing is, there IS a small copse of trees nearby the road from Fukushima to Echigo. Small enough to hide an army.
With some reinforcing naginata infantry, and some bow ashigaru, I layed an ambush. Killed the Satomi Daimyo, his heir, and one of their generals.
Learn when to fall back, learn when to feign weakness. Then when they overstretch themselves, cut off their hand.
Yes all good advice if you attack you can delay the attack and possibly get favorable weather also picking the right season might increase your chances of getting this "bad" weather. If you can attack by ambush they will be in a line formation and you can deploy on two sides and rush him. Rush him ... open your formations to minimize losses, back up your men with your generals and use their rally and inspire abilities to get your army to close with those archers, once you do you will tear them apart.
