How do I limit the european nations troops to just muskets and such

You need to remove all the units you don't want Europeans to have from the export_descr_buildings.txt. Which campaign are you planning to change?

1547 or whatever the empires one

The 1547 campaign uses the export_descr_buildings.txt in the 'Medieval II Total War\mods\conquest\data\empires' folder. Once you've edited this file start this mod, select 1547 Empires from the menu, and start this campaign. The mod will copy all the files from this folder into the 'Medieval II Total War\mods\conquest\data' folder and M2TW will use them.
