Can anyone explain how you get a port to trade? eg if you amend the map and add in new provinces with ports then for some of them sea trade will occur whilst for others they don't seem to get any.

ports will trade with the most profitable settlement's port. This is done automatically, there is no way to tell a port to trade. Don't forget that fishing villages don't have any trade fleets so cant trade. When you build a port then u get one trade fleet which starts trading. With the next level of port you get 2 trade fleets etc . If you see more than 3 blue lines at aport that means that other ports are trading to it.
they don't get any cause they aren't profitable enough and have not been given a port as SteffanGlaze says for example if you have athens and the whole of agean sea, every province will usualy b trading with athens as it is an economic powerhouse and at the beginning of the gfame as the brutii when you capture appolonia you see a trading route as thhat settlement is the most profitable it can trade with

Maybe there is no port to trade to, there are no goods, it's not profitable.
