Why not? Actually it is what faction you are playing?
I am going to assume that you are a western (non spanish) catholic faction so the orders you can get are hospitaller and templar. Most of the things you need to do get points for these two guilds are the same but the hospitallers have few more. So in short you are going to get offered hospitallers first and if you accept them you will get offered them more and more because you will be getting more points for them.
Easy way to get one of these knight orders is a crusade to muslim territory then hold a province that borders with muslims, is a castle and has no guild then join the next crusade against muslims and just before you win join it with all your generals that have enough soldiers, the next turn it will expire cos you have won they will all get nice traits the soldiers with them will get exp and you will get offered the hospitallers in next few turns, if you want these then accept if you dont then say no and hold out few more turns to get offered them. Can you get both? dunno I am currently testing noone seems to agree on here but if you can it is hard.
The spanish factions also have two orders which work the same am not sure of the differences too much though. The HRE has teutonic order which has same rules except replace muslim with pagan.

the triggers to get points off the top of my head are training relevant units if you have small guild already that is, province bordering province of certain religion (pagan for teutonic and muslim for others) and joining crusades. (also the usual building guilds)
no problem mate, although the templars are quite cool and I think slightly better attack units I think the hospitallers have better defense and give public health bonuses being the medival st johns ambulance and all. (if you are luck y they may face paint soem of your troops for increased morale.

Haha, I got Templar 1st time I joined crusade against Vilnius (1st crusade called). As far as I know that is all I did.

that is the first time I have heard of the templars being offered first but I suppose if you only fulfilled the triggers that are shared by both its a 50 / 50 chance, where as most people end up fulfilling some of the triggers that only triggers hospitallers so they have more points with that one and get offered it first.
If you take a look at the linked guide above in my post and then start fulfilling the triggers only associated with hospitallers you have a very good chance of getting both in your campaign.

And yes they got powerful and they everybody look like in Europe so yes they got blamed for something they never did just to get rid of them.
