What were the loyalties of the Grenadiers A Cheval? And how good of cavalrymen are they?

The Flandres regiment were Royalist but all the "Royal" regiments were disbanded by the Assembly in 1791. This regiment is remembered as having stamped on the tricolour-cockade (3.53 here) at a party hosted for them at Versailles (depicted in the "Revolution Francaise" movie). So maybe they could be a Royalist regiment. This was reported by Marat's newspaper "L'ami du Peuple", contributing to the women's march on Versailles.

You are correct! Prince Albert (Victoria's husband) was a member of the same family. Josia's brother was Albert's grandfather. So I guess that makes him Albert's grand-uncle.
As for a royalist elite cavalry, how about the Garde du Corps?

here's a list of cavalry units in general (it's in french):

Garde du Corps may be your best bet for elite royalist cavalry. It appears that the grenadiers a cheval was disbanded in 1775 and reconstituted only in 1796 (as soldiers of the Republic).

Almost all of the elite units of the Royal Household were disbanded by 1787 b/c they were too expensive to maintain. The only military units of the Royal Household that existed in 1789 were the Garde du Corps, the Swiss Guards and the Gardes Francaises. It appears that the Garde du Corps (which was the longest-serving and highest-ranking cavalry regiment in the Royal Household) was loyal. The swords of the guardsmen were inscribed with "Vive le Roi!"

Ah, okay. So do you know a uniform from 1789 that I can use?

Is France going to start as a CM or an AM?
It appears that the uniform remained more or less consistent (also note that the officers rode grey horses. my gf (who is french and is standing over my shoulder) wants me to tell you that is very important...).
Here it is in 1786 (the closest in time to 1789 that I have seen):
And here is a link showing the uniform (and describing it in great detail for each company of the garde) during the 7 years war:

Awesome. Very excited about this one.
By the way, it is clear that the emigre armies used a garde de corps cavalry:

Other cavalry regiments that could be included are:
the Dauphin-Cavalerie
http://fr.wikipedia.org/wiki/R%C3%A9giment_du_Dauphin
http://www.kronoskaf.com/syw/index.p...phin_Cavalerie
and the Royal Allemand, which defected en masse after the revolution (here is uniform from 1757):

By the way, have you seen this link (in french)? It looks very helpful:
