It is stable and nearly bug-free since day one; new patch is more about making game more balanced and adding new features.
Wait... Is there a new patch out?!
Well, it seems that not. But I must go and test that county renaming thing...

I started playing at 1.00 and did about 100 years in my Ireland game and havent been upgrading to the latest patches because I was afraid I wouldnt be able to continue my saved game (which happened to me in a few other games). Will I be able to continue after the patch or will I have to start all over again?

you evil double poster of doom!!!
As far as Paradox games go it's been a pretty beautiful release. I'd say there are still some balancing issues to be worked out but it's really good as is.

CK2 is amazing, I've never bought a Paradox game before in my entire life and I've played perhaps most if not all of their titles since Europa Universalis 2. I've tried the original Crusader Kings too but didn't understand it and never bothered to learn mostly since the graphics were so outdated.
CK2 offers a whole lot of hours in gameplay, especially if you're new to it and never tried the first game either. It takes a while to learn the ropes but eventually when you get better at manipulating the politics in-game you can have a lot of fun and wreak havor even on the HRE if you'd like. I play as England now and after I've inherited the duchy of Aquitaine, I conquered Wales, and after that forcefully installed a new king in Scotland - who just happened to be married matrilineally to my sister. The next Scottish king will be of the same dynasty as me, and so will the next Duke of Holland be.
I'm now playing as a 1 year old boy king since my father died of illness in his late 20's. I have no brothers although I do have two older sisters and the succession laws are agnatic-cognatic, meaning both of my sisters could potentially become queen if I were to be assassinated or something. My mother is Duchess of Champagne so i will inherit all of her land when she dies, and after that I will probably usurp the Kingdom of France and invade the HRE again to install some family members in their land.
