I hope they have some sort of tunneling like Rome, would have to take a long time and be dangerous, but could be effective at giving a second entrance at rear of castle while battle in full swing
The ram and climbers were all that were used historically somebody was saying on this forum.
I think they'll do ladders and some artillery that you bring to the siege or make in a few turns.. maybe they do also add an option to begin the battle immediately with ropes.
