So I read in the game that Fredrick William III forbid the Prussian Cuirassiers from wearing the Cuirass, I've searched here and elsewhere, but I haven't been able to find out why he forbid them from wearing them. Anyone?

It was unfit for a Prussian to be afraid of a bullet(lead ball). A Cuirass may have been simply considered cowardly for a Prussian Cavalryman. It may have seemed foolish, but it might have done wonders for morale... << Just a guess.
