You need to be playing Total War some more
The wedge is mostly for cavalry charge against infantry;
line formation is good for archers, so they don't shoot eachother,
and forming ranks is good for infantry so they don't get run down by the cavalry.
You just play around with the formations a bit and find some good tactics with them.
But never forget the landscape - It's no use having cavalry in wedge if they're charging up hill, and such...

what's a good way to attack with calvary with the wegde? In the middle of the enemy troops or form the sides on the edge circling them or how?
I think cavalry charge is always best from the flanks, but there may be exceptions.

What formation to use against cavalry charge against other cavalry?
He, cavalry against cavalry? I'd still say the wedge formation - head on.
But ideally spearmen would be best against a cavalry charge. Only, that's not always how it works in M&B
