Good question,
Chivalry is how much honor and respect you have, To any normal general its pretty useless, but it does benefit management of cities, I think the more chivalrous you are the more the people in the cities will be happy with your rule. and more pissed by your dread.
Also as a leader of a christian nation, the more chivalrous your are, the better your reputation and influence with the church.
