Does the term 'Hikanati' have any linguistic ties to the word 'ικανος (with the ' being a rough breathing/aspiration mark, don't know how to type it)?
Yes the words refers to the hellenic word ikanos (gr:Ικανός).
In generic term ment those that are perfect in physical condition, had nobble blood and were perfect warriors.
They were created by recruiting noble fammilies sons that wanted to prove their loyalty to the Emperor and prove their valor in battle.
Text describe that because they were young they had a kind of fanatical and broutly charge that terrorised their opponets.
In fact because of their recruitment kind Ikanati are the best cantidates of the Tagmatic unit that changed the name to Archontopulla in the early Kimnenean
era. Archontopulla were "cataphracts" and their name means "sons of nobles"...
Scholarii were similar but their soldiers had average age and in there they could begin their millitary career as career officers.
Btw, those (foot-)spearmen are awesome as well! To which faction do they belong - Croats or Moravians?

Well concerning the word as a Roman term, Anthonius has it:

Just my 2 cents here:
In the middle Byzantine period we have the coexistence of Latin and Greek terms as well as the latinization of Greeks ones or the Greekification of latin ones.
Hikanatoi is on of those examples.
If the term remained Greek then it should have the form "Hikanoi". But since the Latin tradition was still alive, the latin ending -atus to Greek word created the mixed term Hikanatus. Now this term in plural used the Greek ending -oi thus we have Hikanatoi instead of Hikanatae.
Hikanatoi were fighting as crack heavy cavalry which in cavarly Roman tactics they had a dual role.
1.Fight as Defensores/Procursatores (Defenders-in Defence /Vanguard in attack) mostly mellee fighting
2.Cursores ("Mobile ones") mostly archery shooting.
The Tagmatic units were equipped with heavy composite bows, maces, swords and a heavy lance so a Tagmatic cavalryman was able to fight in both styles-a cataphract lancer or a cataphract archer.
When the Tagmatic cavalry charged both lancers and archers were attacking creating a devastating charge against hostile formations. However since we are restricted in the game machanics we have decided to split the roles to 2 Tagmatic units.
Thus the role of cataphract lancer will be held by the Hikanatoi while the Scholarii will fight as cataphract archers(with increased mellee capabilities of course).

Woah?! Damm, the pics in the preview are quite old then (or my memory has totally failed me)!

Your memory failed you!
Remember that Absinthia had re-created the textures and many models of several Bulgarian units.
Later we added a large variety of both Absinthia's and Leif's shield textures.
In the pic you can see some of Leif's shield textures with Absinthia's models and body textures.
Only few units will require a head replacement (too turkic thanks to Rusichi primary material) and addition of 3d parts like belts.
